There are a number of Mexican restaurants in Idaho Falls that we would go back to. Garcia's Market was our favorite, a hopping eatery at the back of the store where the first time we ate there a server took pity on our glazed looks at the hustle and buslr and muscled us into a booth after a suitable period of disorientation. This one has a dish that we fell in love with over 30 years ago in Tuscon, a breakfast dish called machaca. Here you can order the dish, which comes with a large tortilla and make two meals out of it for $12. First you fill and roll up a burrito sized portion in the accompanying tortilla and then you share the remaining machaca with rice, beans, and any number of salsas from the excellent salsa bar. Unfortunately we haven't settle on the perfect second thing to order here, but the machaca is so good we keep trying.
