Friends came over for an open air dinner, and brought this amazing lemon tart--which is both delicious and very easy to put together. Use your favorite crust recipe (I am thinking maybe shortbread and done in the food processor).

large Meyer lemon, cut into 8 pieces

1 1/2 cups
superfine sugar

stick butter

1 teaspoon
vanilla

eggs
- Heat oven to 350° F.
- Put all ingredients (except tart shell) into a blender and whirl like crazy!
- Pour into tart shell.
- Bake for 40 minutes or until set, watching so that the top doesn’t burn.
